Directions

  1. Combine all ingredients into a saucepan.
  2. Use medium heat to bring the sauce to a simmer.

Directions

  1. Remove the thin membrane from the rack of ribs.
  2. Combine the soy sauce, chicken broth, 1/2 cup sugar, olive oil, vinegar, and garlic.
  3. Place the ribs in a dish, and then pour two-thirds of the marinade onto the ribs. Flip the ribs, so each side is coated.
  4. Refrigerate the marinated ribs overnight and flip throughout the night.
  5. Cover and refrigerate the leftover marinade.
  6. The next day, drain the ribs.
  7. Combine the rest of the sugar, salt, and seasonings.
  8. Spread the mixture all over the ribs until seasoned well.
  9. Wrap ribs in foil to cover fully.
  10. Grill the ribs over medium heat for 30 minutes per side.
  11. Baste with leftover marinade or BBQ sauce as desired.
  12. Uncover ribs and place directly on the grill over medium heat.
  13. Cook until the meat is tender.

4. Grilled Shrimp

Seafood pairs perfectly with a summer evening since it can be refreshing. This grilled shrimp can be treated as an appetizer or main dish, depending on the quantity needed.

Ingredients

  • 1/2 cup melted butter
  • 3 tablespoons lemon juice
  • 1 teaspoon ground ginger
  • 2 teaspoons chili powder
  • 1/4 teaspoon salt
  • 2 pounds of uncooked shrimp (peeled and deveined)

Directions

  1. Combine all the ingredients (except the shrimp). Set aside 1/4 cup of the mixture.
  2. Place shrimp onto metal or wooden skewers.
  3. Grill the shrimp over medium heat for 3 to five minutes per side. Shrimp should turn pink once cooked. 
  4. Baste the shrimp with the mixture occasionally during cooking.
  5. Remove from the grill and baste with the remaining butter mixture.

Ingredients

  • 1/4 cup sugar
  • 1/4 cup kosher salt
  • 2 cups water
  • 2 cups ice water
  • 2 tablespoons canola oil
  • 4 center-cut pork rib chops
  • 3 tablespoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground mustard
  • 1 teaspoon coarsely ground pepper
  • 1/2 teaspoon ground chipotle pepper

Directions

  1. In a saucepan, combine the salt, sugar, and 2 cups water.
  2. Cook over medium heat until the sugar and salt fully dissolve.
  3. Remove from the heat and add 2 cups of ice water to cool the brine.
  4. Place the pork chops in a large bag and add the cooled brine.
  5. Seal the bag and turn so the pork chops are fully coated.
  6. Place the pork chops in the refrigerator for 8 to 12 hours.
  7. Remove the pork chops from the brine and pat dry.
  8. Brush both sides of each pork chop with oil.
  9. In a bowl, combine the last 7 ingredients.
  10. Rub the pork chops with the mixture and sit for 30 minutes at room temperature.
  11. Grill the pork chops over medium heat for 4 to 6 minutes per side. The internal temperature should reach 145° before taking off the grill. 

6. BBQ Brisket

BBQ brisket is one of the most popular cuts of meat to cook in the summer. Many people love it for its juicy and tender texture.

However, a brisket can take many hours to reach the perfect flavor and texture.

Ingredients

  • 1 whole beef brisket (fat removed)
  • 1 bottle of Asian honey BBQ sauce
  • 1 cup packed brown sugar
  • 2 tablespoons ground cumin
  • 2 tablespoons garlic powder
  • 1 tablespoon salt
  • 1 tablespoon pepper
  • 1 tablespoon chili powder

Directions

  1. Preheat the grill to 300°.
  2. Place the brisket fat-side up in a large foil pan.
  3. Pour marinade over the brisket and cook for 4 hours. (A shut-off timer may be helpful for the long cooking time.) Combine the remaining dry ingredients and sprinkle over the brisket.
  4. Cook for an additional 2 to 4 hours until tender. The internal temperature should reach 200°.
  5. Cut across the grain diagonally and into thin slices.
